Red Velvet White Chocolate Chip Cookies {A 4 Ingredient Recipe}

When baking, I have to keep things simple. Remember these muffins? 3 ingredients and you get tasty muffins every single time. I am more than willing to get creative when cooking and making breakfast, lunch and dinner but sweets? They are too tricky for me so I like basic recipes. One of my go to recipes is using boxed cake mix to create cookies. With Valentine's Day right around the corner, I thought I'd treat the family to a batch of holiday themed cookies. Insert these simple but delicious Red Velvet White Chocolate Chip Cookies.

The secret to these cookies is the boxed cake mix. I love using these when I want to bake but not spend all day in the kitchen. With just a few other ingredients, you can personalize cookies effortlessly, making baking for the holidays (even the Hallmark ones) a breeze. 


1 box of Red Velvet Cake Mix
1/2 cup Vegetable Oil
2 Eggs
2 cups White Chocolate Chips

Preheat oven to 350 degrees. Mix together cake mix, vegetable oil, and eggs in a large bowl until combined. Mix in white chocolate chips and stir until evenly distributed. Place heaping spoonfuls onto an ungreased cookie sheet. I like to use a small cookie scoop; the ones that look like a miniature ice cream scoop. With this scoop the cookies come out uniform and perfect every time. Bake for 12 to 15 mins. Let set on pan for 2 mins then remove to a wire rack for cooling.

This recipe will make about 30 cookies (when using the cookie scoop mentioned above). I store them in a airtight container and they stay soft and delicious for about a week. That's if you can keep yourself away from them.
