PB & PUMPKIN Dip {All Things Pumpkin Recipe}

When I sat down to brainstorm ideas for our All Things Pumpkin link-up I knew two things: 1) I wanted to share 4 unique recipes and 2) that each recipe would be Connor approved. While I love all things pumpkin (including pumpkin spice) not everyone is as pumpkin crazy as myself. My goal was to introduce both Connor and James to new recipes that involved pumpkin. To kick off our All Things Pumpkin party, I made a quick and easy PB & Pumpkin Dip.

Snack time is a rough one around here. I find that I am often giving Connor the same basic snacks -- fruit, yogurt, crackers or popcorn. This dip allowed us to try something new while pairing some of our favorite go to snacks with it perfectly. Making this dip is ridiculously delicious and comes together within minutes.

1 cup pumpkin puree (NOT pumpkin pie filling)
1 cup smooth peanut butter
½ cup sugar
1 tablespoon pure vanilla extract
¼ teaspoon ground cinnamon
⅛ teaspoon nutmeg

Combined all ingredients into a blender and blend until smooth. Transfer dip to a serving bowl, cover with plastic wrap and refrigerate for 30 minutes. Remove from fridge and serve with graham crackers, pretzels and/or apple slices.

The combination of peanut butter and pumpkin is highly unusual but oh so dang tasty, making portion control an issue with this dip. My favorite dipping tool are the graham crackers while both of the guys like the apples. This dip would be perfect for get togethers this Fall. The longer you chill the dip, the better. If you aren't a huge fan of pumpkin, you could use just a half of cup of pumpkin in this recipe. But like I've mentioned before GIVE ME ALL THINGS PUMPKIN.
