Seven Quick & Easy Weeknight Meals

With the end of Summer in sight (praise Jesus! Give me FALL!) and back to school right around the corner, families are busier than ever. We still have a bit of time before we have to juggle work, school, MOPS and soccer but I have to admit, time is going to be precious over the next few months. Because families don't have the luxury of extra hours in their days, I want to share with you 7 simple dinner ideas that will make meal planning a bit easier this school year.

My go to green veggie is asparagus. When dining out, I order it every chance I get. If we are making something at home that calls for a veggie, I'll choose asparagus every. single. time. Since dieting has been kicked up a notch in these parts, I've been on the lookout for a tasty stir fry that won't cost me a ton of calories but does leave me feeling full. I decided to try my hand at making my own veggie stir fry using my veggie of choice, asparagus. The end result is worthy of bomb dot com status.

When you think of chili, I'm sure the first place you think of is somewhere south. Maybe Texas even? I'm sure Ohio never crosses your mind. But it should! While most folks know of us to be the state that has a deep love for college football (O! H!...), Buckeyes (the edible chocolate type) and the birth place of aviation, we are also home the best chili spaghetti around! Chili spaghetti is commonly known as a heap of spaghetti topped with chili, cheese and oyster crackers, onions and beans are optional. 

When looking for a quick and easy dinner dish my favorite go to is always stir fry. Since we've come to appreciate a simple one pot dinner, I figured it was time for me to branch out a bit. If I can't have asparagus then the next best thing would be broccoli. Chicken and broccoli go hand in hand but with a touch of Mexican spices, this is one stir fry that could compete with our love of Taco Tuesdays.

With Summer, comes the perks of having access to some of the best, most tasty seasonal veggies and fruits. I challenged myself in May to make a recipe that was very "veggie" heavy. Nothing says vegetables like zucchini boats. Prior to making these, I had only had zucchini once before. I'll be the first to admit that my diet needs to improve and that I'm a wimp when it comes to trying something new and eating things green. But I've been trying to break out of that mold and decided to go for gold with this meal. I am so thrilled to report not only are they easy to make but they are incredibly delicious. 

I have to brag on myself for a second. If there is one thing I can whip up in the kitchen that might put others to shame, it's a grilled cheese sandwich. Yes, grilled cheese. I know how simple this is but hear me out. I have mastered the amount of time it takes to perfect grilling the bread so that the end result is a deliciously golden grilled cheese.

I mentioned my love all things that involve asparagus. After sharing a photo on IG and noticing people like to like food pics, I thought it would be nice of me to share this amazing dish. This recipe makes 4 servings and is approximately 270 calories #winning. Add brown rice and you have an easy, delicious, homemade stir fry without the guilt of ordering take out. 

Who else has a weekly taco night? Our menu usually includes taco night at least once a week. But because I was getting tired of the same old same old, I looked for a way to spice Taco Tuesday up a bit. That's when I discovered the tasty dish that is taco soup. While it might not be a taco or burrito, it still gives you the flavor of such, just in a bowl. It's so simple, feeds a crowd and tastes amazing. 

As someone who hasn't always been comfortable in the kitchen, I can say that over the last year my abilities have really grown. I feel much more confident and am willing to try new things. Visit me again at the end of the month for August's Must Make Menu. I hope to share 3-5 new recipes.
