This month, I am going to focus my Rewind Friday my top 5 favorite recipe posts. If I had to share one of the many things blogging has done for me, it is that it's pushed me to get in the kitchen more. I've never been one who loved cooking and baking but thanks to all the tasty recipes that I've seen in the blogisphere and on Pinterest, my love of preparing meals and baked goods is slowly growing.
Sausage Hash Brown Breakfast Casserole
I enjoyed my first breakfast casserole 3 years ago when I joined MOPS. The combination of potatoes, sausage and egg topped with cheese is pure perfection. The best part is you can prep this the night before and just throw in the oven first thing in the morning. There are so many options to making these casseroles that you could easily have a different one each week. Just visit Pinterest for inspiration.
Muffins are the way to my heart. This recipe is so simple that you can make it during quiet time (or nap time if you are lucky enough to enjoy those still #jealous) and enjoy them 2-3 mornings thereafter. If blueberries aren't your favorite, you can substitute them with chocolate chips, raspberries or even cinnamon and apples.
Lemon Chicken Asparagus Stir Fry
Stir fry can't be any more versatile. Pick your meat and veggies and start cooking. We love this lemon chicken asparagus and we make it every 2-3 weeks. Not only it is quick and easy to throw together for dinner, but it's a light meal perfect for Summer. Plus, it makes great leftovers for lunch.
I recently tried these for the first time thanks to the fresh produce we have access to at local farmers markets and they were delicious! I can't make them often enough. Packed full of protein, this carb free dinner option makes you feel good about going back for seconds. I made my first batch with beef but you can easily use turkey or sausage or a combination of both.
My favorite dessert is a warm pan of brownies. But when I'm wanting a cookie, I turn my love of brownies into a Buckeye Brookie. It's the perfect mesh between brownie and cookie with a touch of peanut butter. Something about peanut butter and chocolate is just so good that you can't stop at one and these brookies are the perfect excuse to indulge.
