Let's Brunch - Sausage Hash Brown Breakfast Casserole

I love breakfast foods. Pancakes, eggs, bacon, french toast, sausage. It's safe to say I don't discriminate when it comes to breakfast carbs or protein. But I have to admit that we don't get a cooked breakfast often. Usually it's cereal or a smoothie but from time to time, on the weekends, I'll put together brunch for us. One of my go-to brunch recipe is a Sausage Hash Brown Breakfast Casserole.

The great thing about this casserole is that you can throw it together the night before and then pop it into the oven the morning of. I love putting this recipe to use on Thanksgiving and Christmas morning. The combination of potato, sausage, egg and cheese is delicious.

Sausage Hash Brown Breakfast Casserole

1 pound hot breakfast sausage
1 bag (30 oz) of frozen shredded hash browns
2 cups of milk
8 eggs
2 cups of shredded cheddar cheese
1/4 tablespoon of garlic powder
1/4 tablespoon of onion powers
Salt and Pepper to taste

Preheat the oven to 350 degrees. Cook the breakfast sausage until no longer pink. Drain off fat. Place to the side. Cook the hash browns according to package until they are slightly crisp. I like cooking them before baking the casserole, it gives the dish a nice crunch. Spray a 9x13 baking dish lightly with cooking spray. Place hash browns in baking dish, top with sausage and cheese. You can now cover and bake later or bake now for 35 minutes.

This dish is really filling. It serves a crowd or can be nibbled on for a few days in a row for breakfast. It reheats really well which makes having a tasty breakfast easy for me on a busy morning. Give it a try and I promise you'll be hooked on serving this for breakfast and brunch.
