Chocolate Chip Peppermint Crunch Cookies

I love peppermint. The more the merry and if I don't have to share, which I don't much because James isn't a fan, even better. From candies to drinks to baked goods, I truly love the the smell and taste of peppermint. Earlier this week, my MOPS leadership had a baked goods party. We each baked a dozen or so cookies to box up and gift to our MOPPETS workers. When brainstorming what cookie I would make, I thought what better time to share my peppermint twist on a classic cookie.


This recipe is so easy and the result is a tasty chocolate chip cookie with a punch of flavor from the Andes peppermint crunch. I never imagined loving chocolate chip cookies as much as I do now that I've discovered the ease of adding baking chips of any flavor to the mix to make something a bit different. If you like peppermint make these. You will not be disappointed. You could even wait until after the holiday and use any extra candy canes you have one had to give your cookies the peppermint treatment they so rightfully deserve.

Chocolate Chip Peppermint Crunch Cookies

Ingredients
1/2 cup salted butter, softened
3/4 cup of brown sugar
1/2 white sugar
1 teaspoon of baking powder
1 teaspoon of baking soda
2 teaspoons of vanilla extract
2 eggs
1 cup of Andes Peppermint Crunch baking chips
2 cups of semi-sweet chocolate chips
2 cups of all-purpose flour
2/3 cup of cake flour

Directions 
1. Blend together butter, sugars, baking soda, baking powder, vanilla extract and eggs until mixed well. 
2. Stir in chocolate chips and peppermint crunch. 
3. Slowly add flour and blend together. 
4. Chill cookie for at least 1 hour before baking. THIS IS A MUST (in my opinion of course).
5. Using a cookie dough scoop place dough on a parchment lined baking pan (again in my experience this is a must).
6. Bake cookies for 8-10 minutes, allowing to cool on a baking rack for 3-5 minutes before transferring to your belly... I mean air tight container. 

This pairs perfectly with my Apple Cinnamon Sweet Tea. Not that I know from first hand experience or anything. What sweet treat do you indulge in over the holidays? October and November is full of pumpkin for me and December is all about the peppermint.
