Let's Eat! :: Lemon Chicken & Asparagus Stir Fry

When I shared this beef stir fry recipe, I mentioned my love all things that involve asparagus. That's still the case. While I'm not much of a cook but do love to eat, I've decided to challenge myself to making a brand new dish once a week. This week it was Lemon Chicken & Asparagus Stir Fry. After sharing a photo on IG and noticing people like to like food pics, I thought it would be nice of me to share this amazing dish. Enjoy!

Lemon Chicken & Asparagus Stir Fry

+ 1 pound of lb. skinless chicken breast, cubed
+ 1 bunch of asparagus, washed and cut into thirds
+ Salt, just enough for taste
+ 1/2 cup chicken broth (pick up low sodium if available)
+ 1/2 cup soy sauce (again, watch the sodium)
+ 2 teaspoons of cornstarch
+ 2 tablespoons of water
+ 1 tablespoon of dried garlic
+ 1 tablespoon fresh ginger
+ 3 tablespoons of fresh lemon juice
In a small dish, mix together cornstarch and water and set to the side.
Steam cut asparagus until bright in color but still firm. This usually takes about 2 to 3 minutes. Drain and rinse your asparagus and set them to the side. Heat your skillet over medium heat. Add the lightly salted chicken and lemon juice to the skillet once it's hot. Cook the chicken for about 10-15 minutes until it's nearly cooked. Now, add your veggies, chicken broth, soy sauce, garlic and ginger paste. Mix the stir fry so that the ginger and garlic is evenly dispersed. Once that's cooked for about 4-6 minutes, add your water cornstarch mixture. Cook on low heat for 10-15 minutes, watching for the sauce to thicken.
This recipe makes 4 servings and is approximately 270 calories. Add brown rice and you have an easy, delicious, homemade stir fry without the guilt of ordering take out. Be sure to PIN this recipe for quick reference when you are looking for a quick and tasty dinner solution.
