Let's Eat! :: Beef & Veggie Stir Fry

My go to green veggie is asparagus. When dining out, I order it every chance I get. If we are making something at home that calls for a veggie, I'll choose asparagus every. single. time. Since dieting has been kicked up a notch in these parts, I've been on the lookout for a tasty stir fry that won't cost me a ton of calories but does leave me feeling full. I decided to try my hand at making my own veggie stir fry using my veggie of choice, asparagus. The end result is worthy of bomb dot com status.


Beef & Veggie Stir Fry

Ingredients:
+ 1 pound of lb. lean sirloin, cut into thin strips (I was able to purchase mine pre-cut)
+ 4 c. asparagus, stems removed, cut into 1 inch pieces
+ 3 oz. shredded carrots
+ ¾ c. beef broth
+ 2 T minced garlic
+ 2 T ginger paste
+ 2 T. low sodium soy sauce

Instructions:
Steam cut asparagus and shredded carrots until both are bright in color but still firm. This usually takes about 2 to 3 minutes. Drain and rinse your veggies and set them to the side. Heat your skillet over medium heat. Add the sirloin and all of the beef broth to the skillet once it's hot. Cook the beef for about 4-6 minutes until it's nearly cooked. Now, add your veggies, garlic and ginger paste. Mix the stir fry so that the ginger and garlic is evenly dispersed. Cover and cook on medium heat for 10-15 minutes.

This recipe makes 4 servings and is approximately 240 calories. Add brown rice and you have an easy, delicious, homemade stir fry without the guilt of ordering take out. PIN NOW for dinner later!
